Lots and lots of salad greens (rocket is a must)

1 tomato, sliced/cubed/quartered

4 mini portobello mushrooms, sliced

A couple of thin slices of apple baked ham

Feta cheese

Put all ingredients together in a large bowl. Grab a fork. Pour yourself a glass of wine.

There is something hugely therapeutic about eating foods that only require you to stab it with a fork.
